How it began

Two cooks, one van, and a lot of rice

In 2014 we were two cooks renting a corner of a bakery on Kahikatea Drive, cooking forty meals overnight because we both still had day jobs. The van was a rusty Toyota that only started if you pumped the accelerator twice. We delivered to eleven households in Melville and one office that has stayed with us ever since.

The recipes have changed a lot. The habit of cooking fresh every morning has not. Every tray is made on the day it leaves us, blast chilled within the hour, and driven out in the same vans our own staff use to get to work.

  • We buy from growers we can drive to in under an hour, and we visit them twice a year rather than taking a rep's word for it.
  • Every menu gets read by a registered dietitian before it goes to print, including the winter ones.
  • Surplus meals go to two community kitchens in central Hamilton instead of the skip.
  • Staff eat from the same menu, so nothing ships that we would not put on our own table.

What we believe

Three things we will not work around

When people ask what makes the kitchen different, these are the answers that actually hold up under pressure.

Cook it the day it ships

No batch cooking on Sunday for the whole week. We start at five each morning and pack after lunch, because chilled food that has already sat for three days tastes like it.

Know the grower by name

We buy from 19 growers and producers around the Waikato. Every one of them can reach a human at this company by phone, and most of them do.

Pay people properly

Kitchen staff sit on the living wage plus a share of the weekly surplus. Delivery drivers are on payroll, not on contracts that dodge leave entitlements.

2014

First twelve boxes

We cooked out of a borrowed bakery corner for eleven households and one dental practice in Melville.

2016

First office contract

A software company in Frankton asked for fifty lunches twice a week and never cancelled. That contract paid for our first proper chiller.

2019

Moved to Kahikatea Drive

Our own building, our own loading bay, and the switch to returnable boxes the same month. It cut our packaging spend by a third.

2022

Second packing line

A second line for plant-based meals, kept fully separate to keep trays clean for people with serious allergies.

2025

Waikato-wide delivery

We now run six vans covering Hamilton, Cambridge, Te Awamutu, Morrinsville, Huntly and Raglan on a fixed timetable.

Where the food comes from

Nineteen growers, most of them under an hour away

If we cannot grow it or buy it inside the Waikato, we usually leave it off the menu. Kumara comes from a family block near Te Awamutu. Silverbeet and leeks come from a market garden outside Cambridge. The eggs come from a farm at Tauwhare that lets the hens actually outside, which is why they cost more and why we buy them anyway.

This is part of why our winter boxes run heavier on root crops and brassicas. It is what is good that month, and it is what tastes like food instead of packaging.

We tried weddings and events for one summer in 2018. It went badly. These two lines are what we do properly, so it is what we stick to.

Kitchen rules

The non-negotiables on the wall by the pass

Every new starter reads these out on their first shift. They get checked by the same people who wrote them, which is the only reason they still mean anything.

  • Nothing leaves the building on a tray that has not been blast chilled to below four degrees within ninety minutes.
  • Allergen sheets get signed off twice, once by the cook and once by Mereana, before a box is sealed.
  • If a dish has been sitting on a bench for more than fifteen minutes, it gets binned. That rule alone costs us around $400 a week and we keep paying it.
  • Any customer who calls about a bad meal gets a call back from a person in the kitchen the same day, not an email template.
  • Every grower we buy from gets paid within seven days, because waiting six weeks for invoices is not something we would accept ourselves.
